While there may be frost on the ground, we at Camp CDA are already fully planning for a fun season ahead. Days on the water, evenings around the campfire, and some powerful appetites are all part of the fun. Here is a quick and simple one-pot, our favorite kind, of dinner from our friends at Fresh off the Grid. If asparagus isn’t your thing, feel free to substitute any vegetable you like.

Dutch Oven Chili with Cornbread Topping

Fall has certainly arrived at camp and with it cold nighttime temperatures! Hearty stews and chilis are always a hit during this season and here at Camp CDA the idea of a warming dinner enjoyed around the campfire is why fall camping is our favorite time of year.

Once again we turn to our friends at Fresh off the Grid for their version of an amazing vegetarian chile cooked up in the dutch oven, one of our favorite cooking methods. They add the cornbread directly on top to cook over the chili and it is suddenly a one-dish wonder, one of our other favorite things!

Camp Cooking~ One-Pot Cheesy Chicken Pasta

As the days are drawing shorter and evenings begin earlier, all signs point to the end of summer.

Here at Camp CDA, we are still going strong as we welcome a nearly full campground most nights but the shorter days turn our thoughts to comfort food.  This month we offer up another pasta dish, but not just any old dish. This recipe comes to us from Slow Roasted Italian’s website and is everything you could want in a meal set at camp. Beyond delicious, this dish is packed full of flavor and is also healthy. The fact that it uses just one pot is icing on the cake. Without further ado, I present a new favorite here at camp.
