As another amazing season at camp comes to a close, it is time to look back on a busy year of guests, camp updates, family reunions, and even a wedding reception!
Fall has certainly arrived at camp and with it cold nighttime temperatures! Hearty stews and chilis are always a hit during this season and here at Camp CDA the idea of a warming dinner enjoyed around the campfire is why fall camping is our favorite time of year.
Once again we turn to our friends at Fresh off the Grid for their version of an amazing vegetarian chile cooked up in the dutch oven, one of our favorite cooking methods. They add the cornbread directly on top to cook over the chili and it is suddenly a one-dish wonder, one of our other favorite things!
Once again, our favorite time of year has arrived at Camp CDA! The days are sunny and comfortable and the nights crisp. The leaves are only just beginning to turn and the skies are clear and bright. Campfires burn brightly each evening, the delicious aroma wafting all over the camp.
As the days are drawing shorter and evenings begin earlier, all signs point to the end of summer.
Here at Camp CDA, we are still going strong as we welcome a nearly full campground most nights but the shorter days turn our thoughts to comfort food. This month we offer up another pasta dish, but not just any old dish. This recipe comes to us from Slow Roasted Italian’s website and is everything you could want in a meal set at camp. Beyond delicious, this dish is packed full of flavor and is also healthy. The fact that it uses just one pot is icing on the cake. Without further ado, I present a new favorite here at camp.
Camping is all about fun outdoors. Sleeping under the stars (even if you’re in an RV), cooking al fresco, and spending time outdoors. Camp has been buzzing for months now and the fun continues.
Well, summer has officially arrived in CDA! The dog days of summer call for lake time, lazy days around camp, and cool drinks. It also calls for easy, cooling dinners that don’t take hours to create.

I have a t-shirt that reads ” I wonder if tacos think about me too…”. Here at camp, we do LOVE our tacos. And, as with hamburgers, part of the appeal is that you can literally make a taco out of nearly anything!
Memorial Day, often the first really big weekend of the season is now one for the history books. Lucky for us, the camp was full of fabulous campers and happy families celebrating nearly perfect weather.
Everyone loves a one-skillet dinner but this is especially relevant when camping. Ease of prep and ease of clean-up means more time for fun! This is one of our very favorite one-skillet dinners. The recipe is Indian inspired, however, by simply changing up the spices used can lend itself to whatever flavor profile you desire. Chef Asha Gomez has created a nearly perfect camp dinner.
